Most of the goats in the world exist in the developing countries where they are important in the meat industry. In Europe, goats are mostly kept for milk production although the interest for meat is growing. Goats have a thin carcass with only small amounts of intramuscular fat, which gives a lean meat. This thin subcutaneous fat cover can cause cold shortening when chilling the carcass. By using electrical stimulation cold shortening can be prevented.

How strain and production system effects chicken welfare and quality in meat : a literature review

There are several reasons why organic chicken production is scarce in Sweden. Lack of slow growing (SG) strains combined with higher production costs, lower meat-yield and uncertainty of consumers? willingness to pay seems to be the main reasons. EU-legislations imply use of indigenous slow- or medium growing strains in organic production, nevertheless, fast growing (FG) broilers are often used due to their effectiveness. Increased consumption of processed food creates a market for conventionally rearing of very heavy broilers.

Varför handla svenskt kött? : en konsumentundersökning

The background to the work bases on the consumers view around Swedish and foreign meat products, and how the attitude around the meat products is pursued in the shops. The consumers request high meat quality and security . Many consumers value local produced and ecological meat products but the price is too high. We have done verbal interviews with consumers on three different shops, where we asked questions and had dialogues around Swedish meat products where the consumers have told us their arguments and opinions about Swedish and foreign meat. The result shows that the majority of consumers consider that it is important to know that meat is produce in Sweden.

Globally the quail production is very small, except in China where it is the second largest poultry industry. Several studies indicate that Swedish men consume more meat than women, more frequently appear in advertisements for meat and more often than women handle the grilling of meat. Production of meat is one of the largest contributors to greenhouse-gas emissions and thereby poses a challenge for ecological sustainability. Several Swedish politicians and authorities have argued that reduced meat consumption is necessary to prevent continued global climate change. To understand and change consumption patterns we need to understand the consumer. This essay uses textual analysis to examine how Swedish men through text and images in three cookbooks use preparation and consumption of meat to construct different masculinities.

The purpose of this report was to obtain an overview of rabbit Meat production in the world, in terms of breeding and feeding. It examines how different feed components contribute to the health of the rabbit as well as the quality of the carcass, and the breeding strategies that are most common in the major producing countries. The production of rabbit meat in Sweden is at present not very large, but it is gaining ground, and that is why this paper mainly deals with the rabbit production abroad. This report also examines the disease Rabbit Viral Haermorrhagic Disease (RVHD) in Sweden, where this disease can cause big problems. The rabbit (Oryctolagus cuniculus) is very special, both in its reproduction and digestion. There is no specific mating season and the digestive tract is designed to digest forage efficiently.

Methane emissions from Swedish sheep production

The quantity of methane emissions from sheep depend on several factors, for example, the composition of the diet, feed quality, the age of the animals, time of the day and maybe also breed and sex. A comprising literature review was made about which factors that affect the size of emissions. In addition, a questionnaire was sent to two farms, one with a more intensive production system and another with a more extensive system. Inventories of the two farms were made; the rest of the data needed to conduct the study was taken from literature and other sources. Meat produced at the more intensive farm caused emissions of 0.4 kg of methane per kg of bone free meat and the more extensive farm caused emissions of 0.9 kg methane per kg of bone free meat.

Until the 1st of January 2003 there were thirteen processed meat products provided with name protection in Sweden. These products had to contain a certain amount of meat and/or a certain amount of fat to be allowed to carry a recognized name. Focus of this study was on the underlying values behind consumers buying motives at the point of purchase of meat products in Sweden. In this study the hygienic quality of minced moose meat was examined with regard to the prevalence of different bacteria. The methods used are described in NMKL, "Nordic Method Committee for Food".
